So, what could be more inappropriate than fermenting the aromatic grape Symphony, a cross of Grenache Gris and Muscat of Alexandria developed by UC Davis, with our wild fermented Malvasia Bianca, an Italian aromatic, all wild yeasts!
This dry, super fragrant concoction screams of orange marmalade, lychee, peach, and frangipani blossom. A splendid cocktail wine sipper, try with a Gorgonzola and Parmesan pizza, pan fried pork chops with pineapple slices, or any spicy Asian food.
